Ham & cheese empanadas


Who doesn't like an empanada?  My aunt makes the best empanadas, this is my version of making hers.  I used leftover spiral ham, so this is a great recipe for using up your leftovers.

1/2 teaspoon oil
1/2 red onion minced 
2 cups ham chopped
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika 
 A pinch of rosemary 
1 teaspoon mustard 
1/2 cup grated  cheddar cheese
Pillsbury refrigerated pie crust   


1. In a frying pan drizzle some canola or vegetable oil and add the onions to make them sweat for a minute.  
2. Then add your ham cook it for 5 minutes.
3. Add your seasonings and your mustard and mix it all together
4. Next put your ham mixture in a bowl and put it in the fridge for 20 minutes to cool
5. Roll your pie crust out and cut it into eight pie slices.  Fill each piece with filling.
6. Fold over the crust and use a fork to seal the edges.  
* drizzle mine with honey to make it kinda sweet
