Homemade potatoes chips with seasonings

I love sandwiches and chips, so I wanted to make homemade chips with seasonings.

2 potatoes sliced
1 cup canola oil

Spices for the chips:
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon paprika

1. Cut up the potatoes into round slices

2. In a large pot heat the oil

3. Fry them in oil for five mintues, or until brown

4. In a bowl, add your seasonings and toss them so they have a bit of seasoning

Tips: You can use any poatoes and seasoning

Buttermilk fried chicken

My dad's ancestors are from South Carolina, so my idea was to make a southern classic meal of fried chicke.  But I did mine my own way and how I like it.  It has to be a little bit spicy, a touch sweet, garlicky, and lemony.

5 skinless boneless  or boneless chicken breasts
 1 cup of buttermilk
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp paprika
A pinch rosemary
A pinch thyme

Flour mixture
1 cup of flour
1 teaspoon of salt
1 teaspoon of black pepper
1 /2 cup paprika

3 cups corn oil for frying

1. In a large bowl add the buttermilk, garlic powder, onion powder, paprika, rosemary and the thyme mix it really good and add the chicken to soak in mixture for at least 15 minutes.

2. Get a container add your flour, salt, black pepper, paprika and mix it very well.

3. Add your chicken to the dry mixture and toss it.

4. Get a large frying pan or a fryer and add your oil.

5. Sprinkle a little bit of flour to see if it's hot enough

6. Then put the chicken in the fryer, it will cook for 10 mins or until it is crispy.

Ham & cheese empanadas

Who doesn't like an empanada?  My aunt makes the best empanadas, this is my version of making hers.  I used leftover spiral ham, so this is a great recipe for using up your leftovers.

1/2 teaspoon oil
1/2 red onion minced
2 cups ham chopped
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
 A pinch of rosemary
1 teaspoon mustard
1/2 cup grated  cheddar cheese
Pillsbury refrigerated pie crust

1. In a frying pan drizzle some canola or vegetable oil and add the onions to make them sweat for a minute.
2. Then add your ham cook it for 5 minutes.
3. Add your seasonings and your mustard and mix it all together
4. Next put your ham mixture in a bowl and put it in the fridge for 20 minutes to cool
5. Roll your pie crust out and cut it into eight pie slices.  Fill each piece with filling.
6. Fold over the crust and use a fork to seal the edges.
* drizzle mine with honey to make it kinda sweet

Monte cristo Sandwich

This a savory French toast.  There's different flavors in this sandwich.  It's salty, creamy and has a touch of sweetness.  It's like a croque Madame without the egg batter and or a fried egg.

2 slices white or Texas toast

1 tablespoon butter

2 slices boneless turkey breast or chicken breast

2 slices sliced ham

2 sliced Swiss cheese

1 egg beaten

1/4 cup heavy cream

1. Place the bread on a clean work surface. Spread the tops with butter.

2.  Place the turkey, ham, and cheese slices on one of the pieces of bread. Top with remaining slce of bread, buttered side down.

3. Secure the sandwich with toothpicks placed in opposite corners

4. Beat the egg and milk together.

5. Dip the sandwich in the batter until it is completely coated and the liquid has partially soaked the bread.

6. Melt the butter put the sandwich in the pan and cook it for 5 mintues, flip the other side to make it golden brown.
