Chicken with garlic

I think everyone loves chicken.  Chicken is a popular protein, and you can cook it in different ways and flavors. I absolutely love chicken with lemon juice and garlic. Something about it makes me feel good.


- Two 4 lb chickens, cut up into eight serving 
- 1/2 cup flour
- salt & pepper
- 1/2 cup roasted garlic * 
-  sprig of fresh rosemary
- sprig of fresh thyme 
- zest of 1 lemon and fresh lemon juice
-1/4 cup white wine 
- 3/4 cup chicken stock
- 3 TBSP unsalted butter room temperature cut into pieces

1. Preheat oven to 400*

2: season the flour with salt and pepper 

3. Dredge chicken in flour

4. In a Dutch oven over medium high heat warm the olive oil.  Sear chicken 2 to 3 min per side.

5. Take chicken out and put it in on a plate to the side .

6. Add the roasted garlic to the pan. Cook stirring for a minute.

7. Tie your herbs and add in your wine, lemon juice, zest and herbs.

8. Stir the brown bits from the bottom.

9. Add chicken back into the pan and place in the oven for 15 min or until cooked through.

*Roasted garlic 

- 40 cloves garlic peeled
- 1 TBSP Extra Virgin Olive Oil
- salt
- pepper

1. In a small bowl add your oil and S/ P. 

2. Bake them for 20 mins to 30 mins at 350 degrees.
