1/2 cup jalapeño seeded and minced
1/2 cup red onion diced
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 cornbread mix
1 cup buttermilk

1. Cut up the jalapeño and red onion, and add it to a medium bowl .
2. Add the cheese, cornbread mix, buttermilk and eggs
3. Mix well
4. Spray the Pam in a pan
5. Now scoop the corn cakes into the pan cook on a hot griddle . It will take 5 mins
I topped my corn cakes with steak and onions . You can be creative with your toppings like shrimp or veggies.
