Corn cakes

Who doesn't like corn bread, I love it!  This is similar.


1/2 cup jalapeño seeded and minced
1/2 cup red onion diced
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 cornbread mix 
1 cup buttermilk
Pam

1. Cut up the jalapeño and red onion, and add it to a medium bowl .

2. Add the cheese, cornbread mix, buttermilk and eggs

3. Mix well

4. Spray the Pam in a pan

5. Now scoop the corn cakes into the pan cook on a hot griddle . It will take 5 mins



I topped my corn cakes with steak and onions . You can be creative with your toppings like shrimp or veggies.  


Create your own frittata

I don't like the texture of eggs, but I do like frittatas.  It's an open omelette and it's like a crustless quiche, I decided to try it.  I love to be creative when I make them, but I like my classic one.  You don't have to bake them you can cook it on the stovetop if you need to, which is what I did.



2 potatoes peeled and cut into slices

2 slabs of bacon 

1 cup of ham diced

1 cup cheddar cheese 1/2 cup grated and 1/2 sliced

1/2 red onions cut in julienne 

2 eggs 

1/2 buttermilk 

1/2 minced green onion


1. ) Cut up all the vegetables and meats.

2.) Put the eggs in a bowl. Add the buttermilk and green onions and add your cheese. Then pour it in the pan.


3. ) Cook on the stovetop it should take 15 mins to be completely cooked.  Add the grated cheese on top so it melts.

4.) Enjoy 😊

Taste of the island

This past weekend I was in Montego Bay, Jamaica.  I ate Mrs. Robbie's Kitchen.  It was American  & Jamaica cuisine.  To drink I had punch, it was the best punch I ever had and it wasn't that sweet.  For an appetizer I had crab cakes.  It came with avocado purée that was light.  It didn't taste like a greasy crab cake. For my main course I had a club sandwich it was good with a fried egg on top that made it even better. I was in Jamaica  for my cousin's wedding. The reception was at the Half Moon Resort.  The food was a 9 1/2.  At the reception dinner the food was amazing.  They had curried goat, rice & beans, dumplings and an incredible jerk chicken . The chicken wasn't as spicy as I thought it would be.

Raspberry almond muffin





Who doesn't like a muffins I love them and it's easy to get creative with them.i made raspberry almond muffins , they are easy to make and have a hint of sweet . And you could use a loaf pan . 


2 cups flour

1 teaspoon baking powder 

1 teaspoon baking soda

1/2 tea  salt

4oz soft butter

1 cup sugar 

1/2 teaspoon almond extract 

2 eggs 

2 tablespoon sour cream

1 case of raspberries 

1/3 cups almonds 

Directions 

1. Preheat oven to 350 degrees.

2. Grab a small bowl and put all the dry ingredients in and mix it together.

3. Grab a large bowl for the butter and sugar, blend sugar and butter until it is creamy.

4. Then add the eggs and sour cream and mix it in.

5. Add all the dry ingredients to the wet and mix it.

6.  Then add raspberry and almond in but don't over mix.

7.  Use an nonstick cooking spray  on the muffin pan 

8.  Bake for 25 minutes or until a toothpick inserted comes out clean.  For a loaf bake for approximately 45 minutes.
