Plantain Cornbread

Plantain Cornbread

1 Box Cornbread mix (I prefer jiffy)
2 eggs 
2 Mashed plantains
1/4 cup greek yogurt
1/2 cup grated white cheddar cheese
1/2 cup pepper jack cheese
1/4 cup red pepper 
1/4 cup shallots
1/3 cup green chile 
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika 




1.  Preheat oven 400*

2. In a small bowl mash plantain with a fork.  Then add your egg and your yogurt, mix it together.

3. In large bowl add your cornbread mix, cheese, veggies and your seasoning.

4. Incorporate your plantain mixture into the dry ingredients.  

5. Mix it together; it shouldn't be lumpy.

6. Spray Pam in a cast iron skillet, and add your batter.

7. Bake 25 mins or until it's browned on top. 


Chicken chilli

There's many different ways to make a good chilli.  There's veggie chilli, turkey chilli,  chicken chill, etc. But my favorite is chicken chilli. Ground chicken is very moist and juicy, so it works well in chilli.


Chicken chilli




2 pounds ground chicken
1 TBSP extra virgin olive oil
Salt 
Pepper
Paprika
1/2 cup each diced red and green pepper 
1/2 cup each diced white and red onion
1 minced garlic clove
1 cup frozen corn 
1/2 cup  tomato sauce 
1/4 cup bbq sauce 


1. In a large pot add your oil

2. Add in the chicken to the pot and season it with salt, pepper and paprika

3. Put in your peppers, onions, and garlic let it get soft a bit; it's ok if they get a char

3. Now put in your tomato sauce and your bbq sauce to the pot

4. Simmer it for an hour

5. Enjoy!
