Fried goat cheese with mushroom salad

A lot of people don't like goat cheese because of it's texture or because it tastes like goat milk, but I love it!   I love mine fried and on top of a salad.

Fried Goat Cheese
- 1 log of goat cheese
- 2 eggs beaten
- 1 cup panko
-1/2 cup flour
zest of 1 lemon
- to taste- garlic powder, paprika, salt & pepper
- Olive oil

1. Cut up the goat cheese into medallions

2. Season flour with lemon zest, salt, pepper, paprika and garlic powder

3. Coat the goat cheese in the flour

4. Then dip them in the eggs

5. Coat the cheese in the panko

6. Next add olive oil to a pan until it's ready for frying

7. Fry until it's crispy and golden brown


Mushroom Salad

-1 head Romaine Lettuce
-1/2 red onion julienne
-1/2 tsp dijon mustard
-1 tbsp red wine vingar
-1/2 tsp lemon juice
- mushrooms sliced
- salt & pepper
- garlic powder

1. Tear the lettuce and add the sliced julienne red onion to a large bowl

2. Grab a small bowl and add mustard and red wine vinegar; whisk

4. Meanwhile saute your mushrooms with butter

5. Add mushrooms to your larger bowl

6. Pour your dressing over salad and toss

7. Top salad with fried goat cheese.

8. Enjoy and eat healthy
