Summer Summer drinks
Summer, summer, summertime
Time to sit back and unwind
Here it is the groove slightly transformed
Just a bit of a break from the norm
Just a little somethin' to break the monotony
Of all that hardcore dance that has gotten to be
A little bit out of control it's cool to dance
But what about the groove that soothes that moves romance.
Hey everyone when I think of summer I think of Will Smith's song Summertime. Summertime is great time to hangout with your friends and family. Kick back and cool off with these amazing summer drinks. (Non-alcoholic)
Pineapple Lemonade
3 lemons sliced
1/2 cup fresh or frozen pineapple cut into cubes
3 cups pineapple juice (dole)
2 cups sprite
1/2 cup lemonade
1/4 cup sugar
1. Slice lemons
2. In a pitcher add your lemons, pineapple, and sugar
3. Mix in your pineapple juice, lemonade and sprite.
4. Put it in the fridge for twenty five minutes until cool
5. Pour in a large glass and garnish with lemon zest.

Cucumber and mint soda
1 cup sliced cucumber
1 tablespoon fresh mint
1/4 cup sugar
1/2 cup sprite
1/2 cup sparkling water
1. Sliced cucumber and put them in a bowl with mint
3. Refrigerate for at least an hour
4. In a pitcher, add your sprite and sparkling water.
5. Add your cucumber, mint, and sugar, mix together.
7. Garnish each glass with sliced cucumber and mint

Crunk juice
When I was younger my family friends and I would drink Crunk Juice. We called it that because there wasn't any cool drinks to drink that was colorful like the adults and we named it crunk juice because Lil' Jon had a Crunk juice cup. Crunk juice is non-alcoholic and is very similar to fruit punc .
4 cups Kool aid mix
1 cup mango juice
1 cup pineapple juice
1 cup peach juice
1/2 cup pear juice
3 cups sparkling water
1. In a pitcher add your Kool aid mix
2. Add your mango, pineapple, peach, and pear juices.
3. Mix in your sparkling water and serve.

Shrimp scampi with pesto cream sauce
My shrimp scampi is different than anyone else's. It has a pesto cream sauce.
Shrimp
1/2 teaspoon salt1/2 teaspoon black pepper
1/2 tea crushed red pepper
1/4 cup olive oil
1lb shrimp
Lemon juice

Pesto cream sauce
2 slices of bacon or prosciutto chopped
1/2 cup white wine
1 TBSP pesto I use premade pesto but you can make your own)
1/ 2cup white wine
1 cup heavy cream
Salt TT
Pepper TT

1. Peel and de-vein the shrimp
2. In a small bowl add your and shrimp
3. Season them with salt, black pepper,crushed red pepper, and lemon juice
4. Add your shrimp until pink, about 5 min.
5. Put your cooked shrimp into a small bowl.
6. Cook the bacon. Drain off some of the fat.
7. Now add your shrimp back in to the pan.
8. Add your white wine and let reduce.
10. Next add your pesto and heavy cream, S/ P to taste.
11. Enjoy š

Oven Roasted Spiced Sweet potato
I think everyone might love sweet potatoes, and there are so many different things you can make with them, like a hash, pie or just plain roasted. But my favorite is oven roasted sweet potatoes. This dish is great with red meat or chicken. My recipe is sweet and spicy.
Oven Roasted Spiced Sweet Potato
2 peeled sweet potatoes diced
1/ 2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon red pepper flakes
1/2 teaspoon ground nutmeg
1/4 teaspoon garlic powder
1/2 teaspoon cayenne
1/2 red onion, thinly sliced
1 shallot, thinly sliced
2 TBSP butter
Spray cooking spray
1. Preheat oven 350*
2. Peeled and dice the sweet potatoes
3. In a large bowl add your salt, black pepper, nutmeg, garlic powder, cayenne and mix them.
4. Now add your your sweet potatoes and toss to coat.
5. On a large baking sheet spray cooking spray
6. Add your sweet potatoes out onto baking sheet.
7. Add your sliced onions and shallots over the top of the potatoes.
8. Then add your butter.
9. Bake them for 25 mins; until crispy.
10. Enjoy this amazing sweet potatoes !!
My day In Brooklyn and NYC
Two weeks ago my cousins came up from DC. We always go to the same restaurant here on Long Island, so my other cousin and I decided to take my sister and my cousins to Brooklyn. We left at 4 in the afternoon, and the first thing we did was get Bubble tea. It was ok, but not great. After we went to a thrift clothing store. I bought a camouflage vest, heart necklace, and a ring. This store was different than other stores I've been to, I really enjoyed myself. When we were done we went to Brooklyn Fish Camp. At first I thought this would be just a raw bar, but I was able to order fried oysters. They were crispy and light, and just delicious. When we we were done eating we went to shop, and I got a new bag and shoes. On Sunday we went to brunch with my parents at The Standard Grill. It's the best place to have a Sunday brunch in the meat packing district in NYC. I ordered Huevos Rancheros. I know I hate eggs, but it was really good! After my cousin and I went to a book store. I got a cool book for my restaurant reviews. Towards the end my cousin and I went to Nuchas Empanadas food truck. We ordered the short ribs, spicy chicken and argentine empanadas. After all I had a great time and ate some great food.

Grilled jerk chicken with pineapple and peach salsa
When you think about Jamaican food you might think about jerk chicken. I love mine sweet and spicy.
Jerk chicken
1 pound boneless skinless chicken breast or thighs
1 TBSP jerk seasoning
1/2 teaspoon honey
1 TBSP EVOO
1. Grab a large bowl combine your jerk seasoning and honey; it will become a paste.
2. Add your oil and chicken.
3. Marinate your chicken at least 45 mins to an hour.
4. Grill chicken 10 to 15 mins, or until cooked through.
Peach and pineapple salsa
1 cup grilled fresh pineapple diced (if using canned pineapple, rinse before grilling)
1/2 cup fresh or canned peaches diced
1/2 cup red onion
1/2 jalapeƱo pepper minced
1/2 cup cilantro
S/P to taste
1 teaspoon olive oil
1. Grill the pineapple with salt and pepper
2. Dice the pineapple and peaches and add to a bowl.
3. Dice the onions, jalapeƱo pepper and cilantro and add to your fruit
4. Season with salt and pepper a drizzle of olive oil and toss to coat
5. Enjoy

Plantain Cornbread
Plantain Cornbread
1 Box Cornbread mix (I prefer jiffy)
2 eggs
2 Mashed plantains
1/4 cup greek yogurt
1/2 cup grated white cheddar cheese
1/2 cup pepper jack cheese
1/4 cup red pepper
1/4 cup shallots
1/3 cup green chile
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1. Preheat oven 400*
2. In a small bowl mash plantain with a fork. Then add your egg and your yogurt, mix it together.
3. In large bowl add your cornbread mix, cheese, veggies and your seasoning.
4. Incorporate your plantain mixture into the dry ingredients.
5. Mix it together; it shouldn't be lumpy.
6. Spray Pam in a cast iron skillet, and add your batter.
7. Bake 25 mins or until it's browned on top.
