Corn & Black Bean Salsa

Corn & Black Bean Salsa

One night I wanted to make a corn and black bean salsa for taco night, because I got tired of eating store bought salsa.  I went to my fridge saw fresh corn and black beans in the pantry, so my plan was to make homemade salsa.



Ingredients


  • 1 cup fresh or frozen corn
  • 1 cup black beans drained
  • 1/2 yellow pepper diced
  • 1/4 jalapeƱo diced
  • 1/2 red onion diced
  • 1/2 clove of garlic minced 
  • 1 tsp cumin
  • 1 tsp S&P 
  • 1/2 tbsp red wine vinegar 
  • 1/2 tbsp olive oil
Directions
  1. First cook the corn, then put it in a bowl and put bowl in fridge to make the corn cold.
  2. In the meanwhile, drain the beans and put them in a separate bowl.  Cut up the veggies and season, then add the corn.  Place bowl back in the fridge for at least two hours.
This salsa is good for taco night and a Super Bowl party served with chips!
